چکیده

Fourteen reindeer (8 steers and 6 females) were used to compare the effects of two different reindeer diets (a feed mix based on barley, brome hay and soybean meal (SBM) or fishmeal (WFM) as protein source) on animal growth performance, feed conversion efficiency and ultimate meat quality. Samples from free-ranging reindeer (n=4; 2 steers and 2 females) on the Seward Peninsula were included to provide comparisons with the traditional reindeer meat produced in Alaska. No significant difference was observed in overall weight gain between the WFM and SBM animals or between females and steers; however, the feed conversion efficiency was significantly higher for the reindeer fed the WFM mix. Carcass dressing percentage from the SBM group was higher compared with the WFM animals. No differences were found in live weight, carcass characteristics, meat pH, temperature decline, shear force, meat color or cooking loss when comparing the treatment groups. The meat samples (M. longissimus) from the free-range group had the highest amount of omega-3 fatty acids and also the highest amount of polyunsaturated fatty acids (PUFA). Meat from the animals fed SBM was significantly higher in triglyceride content and lower in phospholipid content compared with the two other groups. No significant differences were found when the trained panel compared the sensory attributes of the meat. Offflavor attributes related to “wild’ or “gamey” flavor was reported by consumers for samples from the WFM and free-range reindeer (15 and 24 per cent of the consumers, respectively). No “fish-related” flavor was reported. In conclusion, no negative effects in either animal performance or meat quality characteristics by using fish meal as opposed to soybean meal as a protein supplement in a milled reindeer diet were found.

Carcass composition and yield of Alaskan reindeer (Rangifer tarandus tarandus) steers and effects of electrical stimulation applied during field slaughter on meat quality.

Twenty six adult reindeer steers (>3 years old) were used in a study to evaluate the effect of electrical stimulation (ES) on the quality of hot-boned, rapidly frozen shoulder meat and of the striploin (M. longissimus, LD) from carcasses held at +3°C for 48h. Carcass yield and composition was determined from the left carcass half from which the shoulder meat was not removed. The shoulder meat w...

Mitochondrial DNA and microsatellite DNA variation in domestic reindeer (Rangifer tarandus tarandus) and relationships with wild caribou (Rangifer tarandus granti, Rangifer tarandus groenlandicus, and Rangifer tarandus caribou).

Reindeer (Rangifer tarandus tarandus) in Alaska are semidomestic livestock descended from 1280 animals introduced from Siberia, Russia, approximately 100 years ago. Genetic variation at 18 microsatellite DNA loci and the cytochrome b gene of mitochondrial DNA (mtDNA) was quantified in reindeer from Alaska, Siberia (Russia), and Scandinavia and compared with wild North American caribou. Mean seq...

Venison: Meat from red deer (Cervus elaphus) and reindeer (Rangifer tarandus tarandus)

To illustrate the most important sources of venison (deer meat) in the world, the examples in this article are taken from the deer farming industry in New Zealand and the traditional reindeer husbandry cultures in Fennoscandia (Sweden, Norway, and Finland) and Alaska (with roots in Russia and Fennoscandia). These deer industries are mainly focused around pasture-based venison production systems...

Transplacental toxoplasmosis in a reindeer (Rangifer tarandus) fetus.

Toxoplasma gondii infection was diagnosed in a full term stillborn reindeer (Rangifer tarandus) fetus. The fetus had encephalitis and placentitis associated with T. gondii. Tissue cysts were identified histologically in sections of brain and tachyzoites were present in placenta and the myocardium. Protozoa in the brain, heart, and placenta stained positively with T. gondii antibodies, but not w...

Evidence of alphaherpesvirus infections in Alaskan caribou and reindeer

BACKGROUND The reindeer (Rangifer tarandus tarandus) industry in Alaska began with animals imported from Siberia (Russia) in the 1890's. Cervid herpes virus 2 (CvHV2) is endemic in reindeer in Scandinavia. We sought to determine if the same virus, or similar herpesviruses, were circulating in Alaskan reindeer and caribou (Rangifer tarandus granti). Serum samples from 292 reindeer were collected...
